Fried battered amaretti

INGREDIENTS FOR 4 PEOPLE
18 dried amaretti
250g flour
1 egg
1/2 tsp baking powder
100ml milk
Marsala or Amaretto liqueur
icing sugar
peanut oil
salt
PREPARATION
1. Sift the flour with the yeast into a bowl. Break the egg in the middle, add a pinch of salt and start to mix with a whisk. Drizzle in the milk, whisking constantly, to bring the batter to a creamy consistency. Arrange the amaretti on a plate and brush slightly with the liquor without soaking them too much.
2. Dip the amaretti, one at a time, into the batter and deep fry them in the wok. When they are golden brown, drain them with the spatula on kitchen paper. Let cool and dust with icing sugar before serving.
