Minestrone soup

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
1 large potato
1 large onion
2 medium zucchini
2 medium carrots
1 handful of green beans
3 plum tomatoes
2 stalks of celery
1 handful of spinach beet greens
2 oz. of rice
4 oz. fresh beans
4 Ecodoses of water
salt
2-3 tbsp of oil
grated Parmesan cheese
PREPARATION
1 Clean and wash the vegetables. Cut the potato into ½ inch cubes and slice the onion. Cut the zucchini and the carrots into quarters and then into ¼ inch slices. Cut the green beans into pieces (a little less than an inch), the tomatoes into round slices (less than half an inch thick), the celery in little cubes.
2 Put the rice into the pot, then add the vegetables and beans, salt and the Ecodoses of water - it does not matter if the vegetables remain partially uncovered, they will steam anyways.
3 Close the pot and turn on the heat to the maximum level, cook for 5 minutes. After the first whistle, reduce the heat to low. Once cooked, let the steam escape gradually, then open the pot, stir strongly and season with olive oil. Serve with grated Parmesan cheese.
