Citrus-flavoured rolled roast

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
800g veal round eye-steak in a single slice
100g bacon
2 sprigs of myrtle
3 sprigs of rosemary
1 garlic clove
1/2 celery stalk
1 lemon
1 orange
1/2 grapefruit
extra virgin olive oil
salt and pepper

PREPARATION
1. Peel, remove the core and chop the garlic in a blender along with the cleaned celery, 1 sprig of rosemary needles, 1 piece of lemon rind and 1 of orange rind. Sprinkle the meat with the mix. Cover with bacon, roll up and tie with string, fixing in the herbs sprigs. Brown the meat on all sides in the stewpot with a little oil.
2. Divide the grapefruit and 1⁄2 orange into segments and put them in the stewpot with the roast. Squeeze in the juice of the lemon and of the remaining 1⁄2 orange. Let it cook for a few moments then season with salt and pepper.
3. Transfer the stewpot into the oven at 170°C, without the lid, and cook the roast for 50-55 mins, turning and basting occasionally with its cooking liquid.
