Ilaria's Risotto Milanese

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
280gr Carnaroli rice
1 litre of stock, always hot
1 sachet saffron
1 glass white wine
1 onion
grated parmigiano
2 knobs of butter
PREPARATION
- Chop the onion and brown it with the first knob of butter, stirring with a wooden spoon. Add the rice and toast it for a few minutes.
- Add a glass of wine, let evaporate and add one ladle of stock. Continue stirring and add more stock when it has been absorbed. Continue like that for about 20 minutes, until the rice is done.
- When half done dissolve the saffron in a little stock and add it to the rice, stirring well.
- When the rice is done add the grated cheese and knob of butter. Stir, cook for a few more minutes and serve the risotto piping hot.
