Lemon scented ratatouille

INGREDIENTS FOR 4 PEOPLE
200g primo sale cheese
1 white onion
1 round aubergine
2 small yellow and red peppers
2 courgettes
2 beefsteak tomatoes
1 unwaxed lemon
4 garlic cloves
dried oregano
1 bunch of fresh mixed herbs (marjoram, basil, rosemary) · extra virgin olive oil
salt and pepper
PREPARATION
1. Clean and dice the aubergine, peppers and tomatoes, cut the courgettes into rounds and the onion into wedges. Heat 1 tbsp oil in the wok and brown the onion for 3-4 mins. Add the peppers, cook for 4-5 mins and transfer into a bowl. Add a little oil in the wok and cook the aubergine for 5-6 mins, then the courgettes for 3-4 minutes, put in the bowl with the other vegetables.
2. Brown the peeled cloves of garlic in the wok. Add the tomatoes and cook for 2 mins. Combine all the vegetables in the wok, add salt, pepper, oregano, a few leaves of fresh herbs and grated lemon rind. Using tongs, distribute the vegetables onto the dishes. Complete with primo sale slices and drizzle with remaining fresh herbs.
