INGREDIENTS FOR 4 PEOPLE
-100gr sliced pancetta
-400gr fresh fava beans
-200gr asparagus
-400gr fresh peas
-2 spring onions
- 2 artichokes
-Pennyroyal
-1 lemon
-Extra virgin olive oil
-Salt and pepper
PREPARATION
- Melt the diced pancetta in the wok, add the spring onions cut into thin slices and sautée them - add the fava beans and peas.
- Peel the asparagus and cut them into large pieces, add them to the wok.
- Finally, clean the artichokes, cut them into thin slices and add them to the wok.
- Add one ladle of water to de-glaze the sugars. add salt and pepper to taste
- At the end of cooking, serve with shredded pennyroyal and a drizzle of extra virgin olive oil
