Steamed Ratatouille

INGREDIENTS FOR 4 PEOPLE
1 yellow pepper,
1 courgette,
1 large potato,
1 aubergine,
5 cherry tomatoes,
2 Ecodoses of water,
2 tablespoons vinegar,
2 tablespoons pine kernels,
2 tablespoons raisins,
4 tablespoons extra virgin olive oil,
Parsley (optional),
Salt
PREPARATION
1 Soak the raisins for 10 minutes in hot water. In the meantime, wash all the vegetables, discard the scraps and cut them into small chunks. Leave the 4 cherry tomatoes whole.
2 Put all the vegetables in the pressure cooker basket together with the squeezed raisins and pine kernels. Pour the Ecodoses of water in the cooker and season the vegetables with salt, oil and vinegar, using a spoon to moisten them (it does not matter if the condiment falls in the water below).
3 Close the lid and cook for 7 minutes after the hiss. Let the steam vent gradually, open the cooker, then arrange the vegetables in four small cocotte pots or small dishes. Thicken the sauce a little and moisten the ratatouille. Sprinkle with chopped parsley (optional).
